All of the courses below take place on Saturday, May 17, 2014, between 9am and 5pm in the Capital One Festival Marketplace, in the DoubleTree Downtown Wilmington, 700 N. King Street, Wilmington, Delaware.

      The Terroir of Honey: Why Location Matters

      This course is for those who enjoy delicious honey in their food and drink or simply by the spoonful. It is for the ‘culinary curious’ who wonder about the various colors of honey, crystallization, and the importance of knowing the source of your honey. The session will include a short presentation, open question and answer dialog, followed by a tasting of multiple honeys from various locations throughout the United States as well as the DelMarVa Peninsula. Participants will have an opportunity to safely observe honey bees working within a glass observation frame and learn how honey is created, extracted and produced. Participants will learn the background of honey, including history and significance of honey and the honeybee in the economy, religion and medicine before modern times. The course will include lessons learned from both an entrepreneur as well as a hobbyist for starting and maintaining bee colonies. Participants will have the opportunity to sample six distinct flavors of honey and a fact sheet will be provided that includes suggested pairings of cheese and wine with each of the honeys in the tasting.

      How Food Connected the World Before the Internet!

      What enables us to present dishes with ingredients that have connected different continents and different societies in the Far East, Africa and the New World are the Portuguese of the 1600 hundreds.

      Though they sailed from the shores of a small country, they were among the world's first international traders. The Portuguese brought coconut milk, ginger and coriander to Brazil, and native Indian ingredients like chilies, manioc and tapioca from Brazil to many countries in the Far East and African.

      Chef and author Yara Castro Roberts will prepare a Moqueca, a traditional Brazilian seafood dish using coconut milk, coriander and chili peppers. And she will prepare a tapioca desert that connects Brazil, the Far East and Africa on one plate.

Cheese makers Samuel Kennedy and Matt Hettlinger from Doe Run Farms along with Cicerone Burke Morrison will be hosting this interactive Cheese and Beer tasting. Four distinct cheeses from Doe Run Farms will be carefully paired with the area’s finest craft beers and interesting discussion on the cheese making process.

      The Craft of Butchering: Swine vs Sea

      Chef Chris Baittinger and Chef Andrew Ramage will demonstrate how to break down a hog and a whole salmon.  The hog will be broken down in what is considered the four primal cuts: 1) shoulder 2) belly 3) loin 4) ham. They will explain the process of butchering a hog while discussing the composition of the cooking techniques. If time allows, they both will show the techniques needed to butcher the head, jowl, trotters, skin and fat.

In this session, father-and-son winemaking team Eric Stauffer and Eric Miller will tell you how it can be done with a minimal investment, using contract winemaking facilities in Napa Valley and other contracted services like bottling and storage. This session includes not only instruction in how to do it and whom to contact, but includes a tasting of wines made in some of these facilities as well as the first tasting of the Erics’ own new Napa Valley Howell Mountain Zinfandel -- which they made in 2013 through virtual winemaking.

Enjoy tastings of the most distinct craft beers including Victory Prima Pils, Victory Lager, La Fin Du Monde, Flying Fish Exit 16, Rogue Double Chocolate Stout, and Lindemans Gueuze Cuvee Rene.
